Sweet Potatoes: According to the CSPI, sweet potatoes are one of the most nutritious vegetables because of their valuable fiber and high levels of beta-carotene and vitamin E.
Potatoes: They provide complex carbohydrates and fiber, are low in fat, and contain 15 different vitamins, minerals and trace elements such as magnesium, iron, zinc and phosphorus, as well as high levels of potassium, vitamins B and C.
Squash: One of the least caloric vegetables, it is rich in vitamin C, beta-carotene, minerals and phytosterols. The fiber it contains makes it highly digestible and aids digestion.
Jerusalem Artichoke: is rich in inulin, a prebiotic that stimulates the growth of healthy bacteria in the gut. A healthy gut flora has a positive effect on the immune system.
Blackberries: These berries are particularly rich in magnesium and iron. They also contain provitamin A and vitamin E.
